Piping with chocolate is one of my favorite ways to decorate, because it’s a lot like drawing or painting, except instead of using a paint brush you use a pastry bag.

From simple abstracts for plate and dessert garnishes, to elaborate butterflies and fancy flourishes for cake decorations and candy buffet accents:  pipe a design freehand, or use a template with an acetate sheet and trace.

Chocolate Piping for Cake Decorating

Emma from the blog “Poires au Chocolate” shows an exquisite example of piping for cake decorating on  “The Beautiful and the Damned Cake” post ( gotta love that title!). I love the Art Nouveau flavor of this design. Check out the full post here.

Piping chocolate butterflies are also a fun way to get your piping skills in the groove. For a touch of sugar whimsy, plunk these on a cake and scatter about with chocolate flowers.

Pipe a Rockin’ Chocolate Abstract Decoration

Last year I made a chocolate decorating holiday video series called “Rockin’ Chocolate”, with my lovely friends Kurt and Nicole Knoble (from chocotransfersheets.com), here is one of the episodes where we pipe some abstract chocolate decorations for dessert garnishes.

FYI: abstracts are like scribbles, no artistic talent needed. Even a monkey can make a chocolate scribble and call it art.

TIPS:

  • You can use a disposable pastry bag or make a parchment cone
  • Make sure your chocolate is tempered or use confectionary coating
  • Don’t pipe your lines too thin or your decoration will be fragile and easily break
  • Don’t fill your bag too full or chocolate will squirt out of the bag and make a mess
  • Pipe on a chocolate transfer sheet for an added zing!
